Food Revolution: Local restaurants need to showcase their native cuisines

The early 1990s were a low ebb for Kolkata. The city was still pleasant, but business had gone, infrastructure was visibly crumbling and, worst of all, it was hard to get Bengali food outside peoples’ homes. For outsiders like I was, as a student at that time, the only option seemed to be Suruchi, a women’s organisation which served basic Bengali food in a severely functional canteen atmosphere.
